01 - Heat a large skillet over medium-high heat. Add the butter and allow it to melt completely. Add the sliced kielbasa in a single layer and cook until browned on both sides, about 4 minutes. Remove the sausage from the skillet and set aside.
02 - In the same skillet, add the chopped onions and sliced potatoes. Cook for 6 to 8 minutes, stirring occasionally, until the potatoes begin to soften and develop a light golden crust.
03 - Add the minced garlic, diced bell pepper, and broccoli florets to the skillet. Sauté for 3 to 4 minutes until the garlic is fragrant and the vegetables begin to tenderize.
04 - Return the browned kielbasa to the skillet. Sprinkle with smoked paprika, dried oregano, salt, and black pepper. Toss everything together until well combined and evenly coated with seasonings.
05 - Reduce heat to low. Sprinkle the shredded cheddar cheese evenly over the entire mixture. Cover the skillet with a lid and let cook for 3 to 5 minutes, until the cheese is fully melted and bubbly and the potatoes are fork-tender.
06 - Remove from heat and garnish with fresh chopped parsley if desired. Serve immediately while hot.
