Juicy beef patty topped with caramelized onions and sautéed mushrooms on a toasted bun.

# What You Need:

→ Caramelized Onions

01 - 2 large yellow onions, thinly sliced
02 - 1 tablespoon unsalted butter
03 - 1 tablespoon olive oil
04 - 1/2 teaspoon salt
05 - 1 teaspoon sugar (optional)

→ Sautéed Mushrooms

06 - 9 oz cremini or button mushrooms, sliced
07 - 1 tablespoon unsalted butter
08 - 1 tablespoon olive oil
09 - 1 garlic clove, minced
10 - Salt and black pepper to taste

→ Beef Patties

11 - 1.3 lbs ground beef (80/20 blend)
12 - 1 teaspoon salt
13 - 1/2 teaspoon black pepper
14 - 1 teaspoon Worcestershire sauce (optional)

→ Burger Assembly

15 - 4 hamburger buns, split
16 - 4 slices Swiss or cheddar cheese (optional)
17 - Lettuce leaves
18 - Tomato slices
19 - Mustard, mayonnaise, or ketchup (optional)

# Directions:

01 - Heat butter and olive oil in a large skillet over medium-low heat. Add sliced onions and salt. Cook, stirring occasionally, for 20-25 minutes until onions are golden and caramelized. Add sugar if desired to accelerate the process. Set aside once finished.
02 - In another skillet, heat butter and olive oil over medium heat. Add mushrooms and cook for 5-7 minutes, stirring occasionally, until browned and tender. Add minced garlic and cook for 1 minute more. Season with salt and pepper. Remove from heat.
03 - In a bowl, gently mix ground beef with salt, pepper, and Worcestershire sauce. Divide into 4 equal portions and shape into patties slightly larger than your buns to account for shrinkage during cooking.
04 - Heat a grill pan or skillet over medium-high heat. Cook patties for 3-4 minutes per side for medium doneness, adding cheese slices during the last minute if using. Allow patties to rest for 1 minute before assembling.
05 - Lightly toast the buns, cut side down, in a dry pan or on the grill until golden and crisp.
06 - Place lettuce on the bottom bun, add the beef patty, top with caramelized onions, sautéed mushrooms, and tomato slices. Add condiments as desired and finish with the top bun. Serve immediately.

# Expert Tips:

01 -
  • Those slow-cooked onions become candy-sweet and deep, transforming an ordinary burger into something restaurant-worthy
  • The mushrooms add such an earthy richness that you might not even miss having bacon
  • Everything cooks in about the same amount of time, so all the components come together hot and ready
02 -
  • Do not rush the onions, because that deep brown color and sweet flavor cannot be faked
  • Mushrooms release a lot of water at first, so be patient and let it cook off completely
  • The patties will shrink as they cook, so make them slightly larger than your buns
03 -
  • Make a small thumbprint in the center of each patty to prevent them from puffing up into balls
  • Use a meat thermometer to check doneness without cutting into the patties
